Three New Yummy Recipes

I got these recipes from a WONDERFUL magazine called Simple and Delicious that Taste of Home publishes. They were so yummy and easy to make, I just thought I would share them. If ever you are interested in some finding some new recipes that are quick and super easy to make, try this magazine! Enjoy!

Smoked Sausage with Penne and Veggies

Prep: 20 minutes Cook: 20 minutes

(It only took me about 30 minutes total)

8 oz uncooked penne pasta

1 cup chopped green pepper

½ cup finely chopped onion

2 tbsp olive oil

1 lb smoked sausage, cut into ½ in. slices (I used turkey Kielbasa because that is what I had in my freezer)

2 cans (14 ½ oz each) Italian stewed tomatoes

2-3 small zucchini, quartered lengthwise and sliced ½ inch thick

½ cup frozen corn

½ cup water

1 tsp salt

1 tsp dried basil

1 tsp minced garlic (or one clove minced)

½ tsp pepper

Shredded Parmesan cheese, optional

  • Cook pasta according to package directions. Meanwhile, in a large skilled, sauté green pepper and onion in oil until crisp-tender.
  • Add the sausage, tomatoes, zucchini, corn, water, salt, basil, garlic, and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes.
  • Drain pasta; toss with sausage mixture. Garnish with Parmesan cheese if desired. YIELD: 5 servings. This makes a yummy soup the next day by adding some chicken broth and a small can of tomato sauce.

Ham and Cheese Loaf

Prep: 15 minutes Bake: 30 minutes

1 tube (13.8 oz) refrigerated pizza crust

10 slices deli ham

¼ c sliced green onions

1 c (4 oz) shredded part-skim mozzarella cheese

1 c (4 oz) shredded cheddar cheese

4 slices provolone cheese

1 tbsp butter, melted

· Unroll dough onto a greased baking sheet; top with ham, onions, and cheeses. Roll up tightly jelly-roll style, starting with long side; pinch seam to seal and tuck ends under. Brush with butter.

· Bake at 350 degrees for 30-35 minutes or until golden brown. Let stand for 5 minutes; cut into 1-in. slices. YIELD: 6 servings.

Stromboli Slices

Prep/Total Time: 25 minutes

1 tube (11 oz) refrigerated crusty French loaf

2 tbsp olive oil

1/2 tsp dried basil

1 package (3-1/2 oz) sliced pepperoni

2 oz (8 oz) shredded part-skim mozzarella cheese

1 cup meatless spaghetti sauce (or pizza sauce), warmed

· Unroll loaf of dough at the seam into a square; cut in half. Combine oil and basil; brush lengthwise down half of each rectangle to within 1/2 in. of edges. Layer brushed side with pepperoni and cheese. Fold plain dough over the filling and pinch the edges to seal. Place on greased baking sheet.

· On greased baking sheet, bake at 350 degrees for 10-15 minutes or until warm golden brown. Cut into slices. Serve warm with spaghetti sauce. Yield: 1-1/2 dozen.

Note: I used a combination of mozzarella, romano, and provolone cheese (they were what was in my fridge). These are also especially yummy if you brush 2 tbsp of olive oil mixed with about 3-4 tbsp of grated Parmesan and a bit of garlic powder on top before baking.
